- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 tbsp freshly grated lemon zest
- 2 tbsp fresh lemon juice
- Additional sugar for rolling

- Preheat oven: Preheat to 350°F (175°C) and line baking sheets with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- Cream butter & sugar: In a large bowl, beat butter and sugar until light and fluffy. Add egg, vanilla, lemon zest, and lemon juice; mix until combined.
- Gradually add dry ingredients, mixing until just combined.
- Shape cookies: Scoop tablespoon-sized dough, roll into balls, and coat with additional sugar.
- Place on prepared baking sheets 2 inches apart.
- Bake: Bake 10–12 minutes until edges are lightly golden. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra lemony flavor, add 1/2 tsp lemon extract. Store cookies in an airtight container for up to 5 days. Optionally, drizzle with a simple lemon glaze for a sweeter finish.
