- Make dressing: Whisk together lemon juice, lemon zest, minced garlic, salt, and pepper.
- Toss: Pour dressing over kale and toss well to combine.
- Finish: Top with Parmesan and toasted breadcrumbs or croutons if using.
- Serve immediately or let sit 10–15 minutes for flavors to develop.
