- 2 cloves garlic, minced
- 4 cups green cabbage, thinly sliced
- 1 medium carrot, sliced
- 1 small potato, diced (optional for heartiness)
- 4–5 cups vegetable broth
- 1/2 tsp dried thyme (optional)
- Zest and juice of 1 lemon
- 2–3 tbsp fresh dill, chopped
- Salt and black pepper, to taste

- Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and cook 4–5 minutes until softened. Stir in garlic and cook 1 minute more.
- Add vegetables: Add cabbage, carrot, and potato if using. Cook for 3–4 minutes, stirring occasionally.
- Simmer: Pour in vegetable broth and add thyme if desired. Bring to a boil, then reduce heat and simmer 18–20 minutes until vegetables are tender.
- Finish with lemon & dill: Stir in lemon zest, lemon juice, and fresh dill. Simmer 1–2 more minutes.
- Season & serve: Adjust salt and pepper to taste. Serve warm with extra dill on top if desired.
Notes
For added protein, stir in white beans or shredded chicken. For a creamier version, add a splash of coconut milk or a spoonful of Greek yogurt when serving. Store leftovers in the refrigerator for up to 3 days.
