  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp salt
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 1 tsp vanilla extract

Lemon Filling

  • 1 can (14 oz) sweetened condensed milk
  • 2 large egg yolks
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, sugar, and salt. Cut in cold butter using a pastry cutter or fork until crumbly. Stir in vanilla.
  3. Press half of the crumb mixture firmly into the prepared pan to form the crust.
  4. Bake crust for 15 minutes until lightly golden.
  5. In a separate bowl, whisk together sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth.
  6. Pour lemon filling over the warm crust.
  7. Sprinkle remaining crumb mixture evenly over the top.
  8. Bake for 20–25 minutes or until top is golden and filling is set.
  9. Cool completely before slicing into bars.

Notes

For extra brightness, add an additional teaspoon of lemon zest. Store bars in the refrigerator for up to 4 days. Dust lightly with powdered sugar before serving if desired.
