- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 tsp salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 1 tsp vanilla extract
Lemon Filling
- 1 can (14 oz) sweetened condensed milk
- 2 large egg yolks
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest

- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, mix flour, sugar, and salt. Cut in cold butter using a pastry cutter or fork until crumbly. Stir in vanilla.
- Press half of the crumb mixture firmly into the prepared pan to form the crust.
- Bake crust for 15 minutes until lightly golden.
- In a separate bowl, whisk together sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth.
- Pour lemon filling over the warm crust.
- Sprinkle remaining crumb mixture evenly over the top.
- Bake for 20–25 minutes or until top is golden and filling is set.
- Cool completely before slicing into bars.
Notes
For extra brightness, add an additional teaspoon of lemon zest. Store bars in the refrigerator for up to 4 days. Dust lightly with powdered sugar before serving if desired.
