- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 packet ranch dressing mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) Rotel (tomatoes with green chilies)
- 1 can (15 oz) diced tomatoes
- 3 cups beef broth (or chicken broth)
- Optional toppings: shredded cheese, sour cream, avocado, tortilla chips, cilantro
Instructions
- In a skillet, brown the ground beef with onion until fully cooked. Drain excess fat.
- Transfer beef mixture to your slow cooker.
- Add garlic, taco seasoning, ranch mix, beans, corn, Rotel, diced tomatoes, and broth.
- Stir well to combine.
- Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours.
- Serve hot with your favorite toppings like cheese, sour cream, or tortilla chips.
Notes
This soup freezes beautifully and tastes even better the next day. For a creamier version, stir in 4 oz cream cheese during the last 30 minutes of cooking.
