- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup honey, plus extra for drizzling

- 1 tsp vanilla extract
- 1 tsp dried culinary lavender
- 1/2 cup chopped almonds or pecans (optional)

- Preheat oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: Whisk together flour, baking soda, salt, and lavender in a bowl.
- Cream butter & sugar: In another bowl, beat butter, sugar, and honey until light and fluffy.
- Add egg and vanilla extract to the butter mixture and mix until combined.
- Gradually add dry ingredients and fold in nuts if using.
- Drop spoonfuls of dough onto prepared baking sheet, spacing 2 inches apart.
- Bake 10–12 minutes until edges are golden brown.
- Drizzle lightly with honey while warm and allow to cool on a wire rack.
Notes
Use culinary-grade lavender only. Adjust honey sweetness to taste. These cookies can be stored in an airtight container for up to 5 days.
