- 1 lb (450g) beef brisket or short ribs, cut into bite-sized pieces
- 6 cups beef or vegetable broth
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 small daikon radish, peeled and sliced
- 2 carrots, sliced
- 1 cup Napa cabbage, chopped
- 2–3 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Salt and black pepper, to taste
- Optional: glass noodles or rice noodles for serving

- Prep meat: In a large pot, sear beef pieces in sesame oil over medium-high heat until browned on all sides.
- Add aromatics: Add garlic and onion and sauté 1–2 minutes until fragrant.
- Add broth & simmer: Pour in broth and soy sauce. Bring to a boil, then reduce heat and simmer for 30 minutes until meat starts to tenderize.
- Add vegetables: Add daikon, carrots, and Napa cabbage. Simmer 15–20 minutes until vegetables are tender.
- Season & serve: Adjust salt and pepper to taste. Garnish with green onions. Optionally, serve over cooked glass noodles or rice noodles for a hearty meal.
Notes
For richer flavor, simmer beef longer or use a bone-in cut. Can also add Korean chili flakes (gochugaru) for a spicy version.
