- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- Extra sugar for rolling
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract; mix until smooth.
- Whisk together flour, baking soda, baking powder, and salt; gradually add to wet ingredients until combined.
- Shape dough into 1-inch balls and roll lightly in sugar.
- Place cookies 2 inches apart on prepared baking sheets.
- Bake 10–12 minutes, until edges are lightly golden but centers remain soft.
- Cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.
Notes
For extra soft cookies, do not overbake. Store in an airtight container at room temperature for up to a week.
