Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Extra sugar for rolling

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add egg and vanilla extract; mix until smooth.
  4. Whisk together flour, baking soda, baking powder, and salt; gradually add to wet ingredients until combined.
  5. Shape dough into 1-inch balls and roll lightly in sugar.
  6. Place cookies 2 inches apart on prepared baking sheets.
  7. Bake 10–12 minutes, until edges are lightly golden but centers remain soft.
  8. Cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.

Notes

For extra soft cookies, do not overbake. Store in an airtight container at room temperature for up to a week.
