Description

Irish Sausage Rolls are flaky puff pastry wrapped around savory Irish sausage, baked until golden and delicious. Perfect for St. Patrick’s Day parties, brunch, or appetizers.

  • 1 lb Irish sausage (mild or spicy)
  • 1 sheet puff pastry, thawed
  • 1 small onion, finely chopped (optional)
  • 1 egg, beaten (for egg wash)
  • Salt and pepper, to taste
  • Optional: mustard or herbs for seasoning

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Remove casing from sausage if necessary and mix with finely chopped onion and seasonings.
  3. Roll out puff pastry sheet and cut into rectangles approximately 3×4 inches.
  4. Place a portion of sausage mixture along the center of each rectangle.
  5. Fold pastry over the sausage and seal edges with a fork.
  6. Brush tops with beaten egg for a golden finish.
  7. Bake for 20–25 minutes until pastry is puffed and golden and sausage is cooked through.
  8. Allow to cool slightly before serving. Serve warm or at room temperature.

Notes

For extra flavor, mix in fresh herbs like parsley or thyme with the sausage. Can be made ahead and reheated in the oven for 5–10 minutes.
