  • 1/2 cup milk, warmed
  • 4 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 1 cup shredded cheddar cheese (optional)
  • 2 large eggs, beaten
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper, to taste
  • Butter or oil for greasing the dish

  2. Boil potatoes in salted water for 15–20 minutes until tender. Drain well.
  3. Mash potatoes with butter and warm milk until smooth.
  4. Stir in chopped onion, eggs, parsley, salt, and pepper. Mix well.
  5. Fold in shredded cheese if using.
  6. Spread mixture evenly into prepared pie dish.
  7. Bake for 35–40 minutes until set and lightly golden on top.
  8. Cool slightly before slicing and serving.
