- 2 tbsp olive oil

- 1 cup shredded cheddar cheese
- 6 slices Irish bacon, cooked and chopped
- 1/4 cup sliced green onions
- Optional: sour cream or Irish cream sauce for topping

- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss potato slices with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
- Bake for 20–25 minutes until crispy and golden, flipping halfway through.
- Remove from oven and transfer potatoes to an oven-safe serving dish.
- Sprinkle shredded cheddar cheese and cooked bacon over the potatoes.
- Bake an additional 5–7 minutes until cheese is melted.
- Top with sliced green onions and serve with sour cream if desired.
Notes
For extra crispiness, soak potato slices in cold water for 20 minutes and pat dry before baking. You can also add jalapeños or chopped herbs for extra flavor.
