- 1 1/2 lb boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper, to taste
- 1/3 cup honey
- 1–2 tbsp hot sauce (to taste)
- 1 tbsp apple cider vinegar
- 3 cups cooked white or brown rice
- 1 cup roasted or steamed broccoli
- 1 cup shredded carrots
- Optional: green onions, sesame seeds

- Season chicken with paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken 5–7 minutes per side until golden and cooked through (165°F / 74°C). Remove and slice.
- In a small bowl, whisk honey, hot sauce, and apple cider vinegar.
- Return sliced chicken to the skillet and pour hot honey sauce over the top.
- Simmer 1–2 minutes, tossing until chicken is fully coated and sticky.
- Assemble bowls with rice, chicken, broccoli, and carrots.
- Garnish with green onions and sesame seeds if desired.
Notes
Adjust the heat level by adding more or less hot sauce. These bowls are great for meal prep and taste delicious with quinoa or cauliflower rice as a base.
