- 2 cups mashed potatoes (cold leftovers work best)
- 1 cup all-purpose flour
- 1 large egg
- 2 tbsp unsalted butter, melted
- 1/4 tsp baking powder
- Salt and black pepper, to taste
- Butter or oil, for frying

- In a large bowl, mix mashed potatoes, flour, egg, melted butter, baking powder, salt, and pepper until a soft dough forms.
- Turn dough out onto a lightly floured surface and knead gently.
- Roll dough to about 1/2-inch thickness and cut into rounds.
- Heat butter or oil in a skillet over medium heat.
- Cook potato cakes for 3–4 minutes per side until golden brown.
- Transfer to a plate and keep warm. Serve immediately.
Notes
Serve Irish potato cakes with butter, sour cream, or alongside eggs and bacon. You can also add chopped scallions or herbs to the dough for extra flavor.
