This Homemade Green Bean Casserole is made completely from scratch β no canned soup! π₯ Fresh green beans, creamy mushroom sauce, and crispy onions make this a comforting and flavorful holiday side dish everyone will love.

- 1 lb fresh green beans, trimmed and cut in half
- 2 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 tbsp all-purpose flour
- 1 cup chicken or vegetable broth
- 1 cup heavy cream or milk
- Salt and black pepper to taste
- 1 1/2 cups crispy fried onions (divided)
- 1/2 cup shredded cheddar or parmesan cheese (optional)
Instructions
- Preheat oven to 375Β°F (190Β°C). Grease a 9×13-inch baking dish.
- Blanch green beans in boiling salted water for 3β4 minutes, then transfer to ice water to stop cooking. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add onions, garlic, and mushrooms, sautΓ©ing until tender (about 5β6 minutes).
- Stir in flour and cook for 1 minute. Gradually whisk in broth and cream, stirring until thickened and creamy.
- Season with salt and pepper, then stir in green beans and half of the fried onions (and cheese if using).
- Transfer mixture to the baking dish and bake for 20 minutes.
- Top with remaining fried onions and bake an additional 5β7 minutes until golden brown and crispy.
