Ingredients

  • 1 lb boneless, skinless chicken breasts, diced or thinly sliced
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper to taste
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté chicken until lightly browned but not fully cooked, about 4–5 minutes. Remove from heat.
  3. In the same skillet, sauté onion and garlic until fragrant, about 2 minutes.
  4. In a greased baking dish, layer chicken, zucchini, cherry tomatoes, and sautéed onion and garlic.
  5. Season with Italian herbs, salt, and pepper.
  6. Top with mozzarella and Parmesan cheese.
  7. Bake for 20–25 minutes until chicken is fully cooked and cheese is melted and golden.
  8. Garnish with fresh basil or parsley before serving.
