- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh basil, chopped
- 1 tsp garlic powder
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 1/2 tsp crushed red pepper flakes (optional)
Instructions
Instructions
- Preheat oven: Preheat oven to 375°F (190°C).
- Prepare filling: In a bowl, mix ricotta, Parmesan, parsley, basil, garlic powder, salt, and pepper until well combined.
- Butterfly chicken: Slice each chicken breast horizontally, being careful not to cut all the way through, then open like a book.
- Stuff and roll: Spread the ricotta mixture evenly on each chicken breast, then roll tightly and secure with toothpicks if needed.
- Sear rolls: Heat olive oil in a skillet over medium-high heat. Sear chicken rolls on all sides until golden, about 2–3 minutes per side.
- Bake: Transfer chicken rolls to a baking dish, pour chicken broth over them, and bake 20–25 minutes until cooked through.
- Serve: Remove toothpicks, slice if desired, and serve with pan juices or a light sauce. Garnish with fresh herbs.
Notes
For a more flavorful filling, add sun-dried tomatoes or spinach to the ricotta mixture. Make ahead: You can prep the rolls and refrigerate them for a few hours before cooking.
