- Cook chicken: Heat olive oil in a skillet over medium heat. Cook chicken 5–6 minutes per side or until internal temperature reaches 165°F (74°C). Slice thinly.
- Prepare couscous: In a small pot, bring chicken broth to a boil. Remove from heat, stir in couscous, cover, and let sit 5 minutes. Fluff with a fork.
- Assemble bowls: Divide couscous between bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and feta.
- Garnish with fresh parsley and serve with lemon wedges.
Notes
For extra flavor, drizzle bowls with a simple vinaigrette or tzatziki sauce. Can swap couscous with quinoa or rice. Great for meal prep—store components separately for up to 3 days.
