Description

This Hearty Lentil Soup is loaded with wholesome lentils, vegetables, and warm spices. It’s a filling, nutritious, and comforting meal that’s perfect for a weeknight dinner or meal prep.


Ingredients

  • 1 1/2 cups dried green or brown lentils, rinsed
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 medium potatoes, peeled and cubed
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 8 cups vegetable broth
  • 2 tbsp olive oil
  • 2 cups fresh spinach or kale, chopped
  • Juice of 1 lemon (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic, cooking for 4–5 minutes until softened.
  2. Add lentils, potatoes, cumin, paprika, thyme, salt, pepper, and vegetable broth. Stir well.
  3. Bring to a boil, then reduce heat and simmer, covered, for 35–40 minutes until lentils and potatoes are tender.
  4. Stir in spinach or kale and cook for another 5 minutes until wilted.
  5. Adjust seasoning and add lemon juice before serving for extra brightness.

Notes

This recipe is vegan, gluten-free, and high in protein and fiber. Leftovers keep well in the fridge for 4 days or can be frozen for up to 3 months.
