Description
This Hearty Lentil Soup is loaded with wholesome lentils, vegetables, and warm spices. It’s a filling, nutritious, and comforting meal that’s perfect for a weeknight dinner or meal prep.
Ingredients

- 1 1/2 cups dried green or brown lentils, rinsed
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 medium potatoes, peeled and cubed
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried thyme
- 1 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 8 cups vegetable broth
- 2 tbsp olive oil
- 2 cups fresh spinach or kale, chopped
- Juice of 1 lemon (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic, cooking for 4–5 minutes until softened.
- Add lentils, potatoes, cumin, paprika, thyme, salt, pepper, and vegetable broth. Stir well.
- Bring to a boil, then reduce heat and simmer, covered, for 35–40 minutes until lentils and potatoes are tender.
- Stir in spinach or kale and cook for another 5 minutes until wilted.
- Adjust seasoning and add lemon juice before serving for extra brightness.
Notes
This recipe is vegan, gluten-free, and high in protein and fiber. Leftovers keep well in the fridge for 4 days or can be frozen for up to 3 months.
