- 1 lb ground beef
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 cups green cabbage, chopped
- 3 medium carrots, sliced
- 3 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 1 tsp dried thyme
- 1 tsp paprika
- 1 bay leaf
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
- Add onion and garlic, sauté for 2–3 minutes until fragrant.
- Stir in carrots, celery, and cabbage. Cook for 5 minutes until slightly softened.
- Add diced tomatoes, beef broth, thyme, paprika, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30–40 minutes until vegetables are tender.
- Remove bay leaf before serving. Adjust seasoning to taste.
Notes
For extra flavor, add a splash of Worcestershire sauce or a pinch of red pepper flakes. This soup tastes even better the next day!
