  • 3 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add onion and garlic, sauté for 2–3 minutes until fragrant.
  3. Stir in carrots, celery, and cabbage. Cook for 5 minutes until slightly softened.
  4. Add diced tomatoes, beef broth, thyme, paprika, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30–40 minutes until vegetables are tender.
  6. Remove bay leaf before serving. Adjust seasoning to taste.

Notes
