  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream (for serving)
  • Fresh cilantro, chopped (for garnish)
  • Tortilla strips or chips (for serving)
  • 1 lime, cut into wedges (optional)

  1. Prepare crockpot: Place chicken, black beans, corn, diced tomatoes, onion, garlic, chicken broth, chili powder, cumin, paprika, salt, pepper, and red pepper flakes (if using) in the crockpot. Stir to combine.
  2. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender.
  3. Shred chicken: Remove chicken from crockpot and shred with two forks, then return to the soup.
  4. Stir in cheese until melted and combined.
  5. Serve: Ladle soup into bowls and top with tortilla strips, a dollop of sour cream, fresh cilantro, and a squeeze of lime if desired.

Notes

For extra depth of flavor, sauté onions and garlic before adding to the crockpot. Leftovers store well in the fridge for 3 days or freeze for up to 2 months.
