- 4 cups chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1/4 tsp crushed red pepper flakes (optional)
- 1 cup shredded cheddar or Mexican blend cheese
- 1/2 cup sour cream (for serving)
- Fresh cilantro, chopped (for garnish)
- Tortilla strips or chips (for serving)
- 1 lime, cut into wedges (optional)

- Prepare crockpot: Place chicken, black beans, corn, diced tomatoes, onion, garlic, chicken broth, chili powder, cumin, paprika, salt, pepper, and red pepper flakes (if using) in the crockpot. Stir to combine.
- Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender.
- Shred chicken: Remove chicken from crockpot and shred with two forks, then return to the soup.
- Stir in cheese until melted and combined.
- Serve: Ladle soup into bowls and top with tortilla strips, a dollop of sour cream, fresh cilantro, and a squeeze of lime if desired.
Notes
For extra depth of flavor, sauté onions and garlic before adding to the crockpot. Leftovers store well in the fridge for 3 days or freeze for up to 2 months.
