These Healthy Zucchini Oatmeal Cookies are soft, chewy, and packed with wholesome ingredients. Naturally sweetened and loaded with grated zucchini and oats, they’re a guilt-free treat perfect for snacks or dessert.

- 1 cup grated zucchini (about 1 medium)
- 1 cup rolled oats
- 3/4 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup coconut oil, melted
- 1/3 cup maple syrup or honey
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup raisins or chopped nuts (optional)
Instructions
- Preheat oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a bowl, combine oats, flour, baking soda, cinnamon, and salt.
- Combine wet ingredients: In another bowl, whisk melted coconut oil, maple syrup (or honey), egg, and vanilla.
- Mix together: Add wet ingredients to dry ingredients and stir until combined. Fold in grated zucchini and raisins or nuts if using.
- Scoop cookies: Drop spoonfuls of dough onto prepared baking sheet, spacing about 2 inches apart.
- Bake: Bake for 12–15 minutes, until edges are golden and cookies are set.
- Cool & serve: Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 3 days or freeze for longer storage. For a nut-free version, omit nuts and substitute with extra raisins or seeds.
