Instructions
- Grate sweet potatoes and onion. Place in a clean kitchen towel and squeeze out excess moisture.
- In a large skillet, heat olive oil over medium heat.
- Add sweet potatoes and onion, spreading into an even layer. Press lightly with a spatula.
- Cook for 5β7 minutes until the bottom is golden and crispy. Flip in sections and cook another 5β7 minutes.
- Season with garlic powder, paprika, salt, and pepper.
- Serve hot, garnished with fresh parsley or chives if desired.
