- 2 medium sweet potatoes, baked and mashed
- 1 cup whole wheat or all-purpose flour (plus extra for dusting)
- 1/4 tsp salt
- 1 egg, lightly beaten
- 2 tbsp olive oil or butter
- 2 cloves garlic, minced
- 1 tbsp fresh herbs (parsley, thyme, or sage), chopped
- Salt and pepper, to taste
- Optional: grated Parmesan cheese for serving
Instructions
- Bake sweet potatoes at 400°F (200°C) until tender. Let cool, peel, and mash.
- Mix mashed sweet potatoes with egg, salt, and gradually add flour to form a soft dough. Dust with flour as needed.
- Roll dough into long ropes, about 1/2-inch thick, and cut into 1-inch pieces. Press lightly with a fork to create grooves.
- Bring a large pot of salted water to a boil. Cook gnocchi in batches until they float to the surface (about 2–3 minutes). Remove with a slotted spoon.
- In a skillet, heat olive oil or butter over medium heat. Sauté garlic until fragrant, then toss in cooked gnocchi and fresh herbs.
- Season with salt and pepper, and serve immediately with optional grated Parmesan.
