- 1/3 cup crumbled cotija cheese or feta cheese
- 1 avocado, diced

- 2 tbsp mayonnaise
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste

- Combine salad: In a large bowl, mix cooked pasta, corn, bell pepper, red onion, cilantro, jalapeño, and cheese.
- Pour dressing over the salad and toss until evenly coated.
- Gently fold in diced avocado before serving.
- Chill for 20–30 minutes for best flavor, then garnish with extra cilantro and cheese if desired.
