Ingredients

  • 2 cups broccoli florets

  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup unsweetened almond milk or milk of choice
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Optional toppings: shredded cheddar cheese, chopped chives, or Greek yogurt

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until soft and fragrant.
  2. Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer 15 minutes.
  3. Add broccoli florets and cook another 5–7 minutes until tender.
  4. Use an immersion blender to blend the soup until smooth and creamy.
  5. Stir in almond milk and adjust seasoning with salt and pepper.
  6. Serve hot with optional toppings such as shredded cheese, chives, or a dollop of Greek yogurt.
