- 2 cups broccoli florets
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup unsweetened almond milk or milk of choice
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Optional toppings: shredded cheddar cheese, chopped chives, or Greek yogurt
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onion and garlic until soft and fragrant.
- Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer 15 minutes.
- Add broccoli florets and cook another 5–7 minutes until tender.
- Use an immersion blender to blend the soup until smooth and creamy.
- Stir in almond milk and adjust seasoning with salt and pepper.
- Serve hot with optional toppings such as shredded cheese, chives, or a dollop of Greek yogurt.
Notes
For a vegan version, skip cheese or use plant-based alternatives. This soup stores well in the fridge for up to 3 days and can be frozen for later.
