- 2 lbs (900g) beef chuck, cut into 1-inch cubes
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tbsp all-purpose flour
- 1 bottle (11.2 oz / 330ml) Guinness stout
- 4 cups beef broth
- 4 large carrots, peeled and chopped
- 3 celery stalks, chopped
- 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
- 2 bay leaves
- Optional: 1 cup frozen peas

- Brown beef: Season beef with salt and pepper. Heat olive oil in a large pot over medium-high heat. Brown beef in batches and set aside.
- Sauté aromatics: In the same pot, add onion and garlic. Cook until softened, 3–4 minutes. Stir in tomato paste and flour, cooking 1–2 minutes.
- Add liquids: Pour in Guinness and beef broth, scraping up browned bits from the bottom.
- Simmer stew: Return beef to the pot. Add carrots, celery, thyme, and bay leaves. Bring to a boil, then reduce heat and simmer covered 1.5–2 hours until beef is tender.
- Finish: Remove bay leaves. Stir in peas if using, and simmer 5 minutes. Adjust seasoning with salt and pepper.
- Serve: Ladle into bowls and enjoy with crusty bread or mashed potatoes.
Notes
For even richer flavor, let the stew rest overnight. You can also add parsnips or potatoes for extra heartiness.
