Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes
  • 1 (10 oz) can Rotel (tomatoes with green chilies)
  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth
  • 1 (1 oz) packet taco seasoning (or homemade)
  • 1 tsp chili powder (optional, for heat)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheddar, sour cream, tortilla chips, avocado, cilantro

Instructions

  1. In a large pot, cook the ground beef with onion and garlic until browned. Drain excess fat if necessary.
  2. Add beans, corn, diced tomatoes, Rotel, tomato sauce, and beef broth.
  3. Stir in taco seasoning, chili powder, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes.
  5. Ladle into bowls and top with cheese, sour cream, or crunchy tortilla chips.

Notes

For a slow cooker version, brown the beef and onion first, then transfer everything to the crockpot and cook on LOW for 6–8 hours. Freezes great for easy meal prep!
