- 1 lb ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (10 oz) can Rotel (tomatoes with green chilies)
- 1 (8 oz) can tomato sauce
- 2 cups beef broth
- 1 (1 oz) packet taco seasoning (or homemade)
- 1 tsp chili powder (optional, for heat)
- Salt and pepper, to taste
- Optional toppings: shredded cheddar, sour cream, tortilla chips, avocado, cilantro
Instructions
- In a large pot, cook the ground beef with onion and garlic until browned. Drain excess fat if necessary.
- Add beans, corn, diced tomatoes, Rotel, tomato sauce, and beef broth.
- Stir in taco seasoning, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes.
- Ladle into bowls and top with cheese, sour cream, or crunchy tortilla chips.
Notes
For a slow cooker version, brown the beef and onion first, then transfer everything to the crockpot and cook on LOW for 6–8 hours. Freezes great for easy meal prep!
