- 1/4 cup red onion, finely chopped
- 1/4 cup cherry tomatoes, diced
- 1 tablespoon cilantro, chopped
- 1 tablespoon lime juice
- Salt, to taste
- For the Creamy Sauce:
- 1/4 cup Greek yogurt or sour cream
- 1 tablespoon mayo
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- Salt and chili flakes, to taste
- For Assembly:
- 2 cups cooked rice or quinoa
- 1 ripe avocado, sliced
- Lime wedges & extra cilantro, for garnish
Instructions
- Grill the Shrimp: Toss shrimp with olive oil, garlic powder, paprika, lime juice, salt, and pepper. Grill on skewers or in a grill pan for 2–3 minutes per side until opaque and charred.
- Make the Corn Salsa: In a bowl, combine corn, red onion, tomatoes, cilantro, lime juice, and salt. Mix and set aside.
- Prepare the Creamy Sauce: In a small bowl, whisk together yogurt, mayo, lime juice, garlic powder, and season to taste.
- Assemble the Bowls: Divide cooked rice or quinoa into bowls. Top with grilled shrimp, corn salsa, avocado slices, and drizzle with creamy sauce. Garnish with lime wedges and cilantro.
Notes
