- 1/3 cup olive oil
- 1 packet ranch seasoning mix
- 3 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt

- Prep skewers: If using wooden skewers, soak in water for at least 30 minutes.
- Marinate chicken: In a large bowl, combine olive oil, ranch seasoning, garlic, parmesan, paprika, salt, and pepper.
- Add chicken cubes and toss until evenly coated. Cover and marinate for at least 30 minutes (or up to overnight).
- Assemble skewers: Thread chicken pieces onto skewers evenly.
- Grill: Preheat grill to medium-high heat. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
- Finish: Sprinkle with extra parmesan if desired and serve hot.
Notes
For extra flavor, brush skewers with melted butter and garlic during the last few minutes of grilling. These also bake well in the oven at 425°F (220°C) for 18–20 minutes.
