Ingredients

For the Chicken

  • lbs boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Bowls

  • 3 cups cooked jasmine rice or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh dill
  • Salt and black pepper to taste

Instructions

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
  2. Cook the chicken: Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until golden and the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
  3. Prepare the tzatziki: Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper until smooth. Refrigerate until ready to serve.
  4. Prepare the toppings: Slice the tomatoes, cucumber, onion, and chop the parsley.
  5. Build the bowls: Divide the cooked rice among four serving bowls. Top with sliced chicken, tomatoes, cucumber, onion, olives, and feta cheese.
  6. Add the sauce: Spoon a generous amount of tzatziki over each bowl.
  7. Serve: Garnish with fresh parsley and an extra squeeze of lemon juice before serving.

Notes

These bowls are excellent for meal prep and can be stored in the refrigerator for up to 4 days. Keep the tzatziki separate until serving for the freshest flavor. You can also substitute quinoa, cauliflower rice, or mixed greens for the rice to create a lower-carb version.
