Instructions
- Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
- In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in egg and vanilla.
- Gradually add flour mixture to wet ingredients, mixing until combined.
- In a small bowl, mix cream cheese and granulated sugar until smooth for the cheesecake filling.
- Roll dough into balls, then flatten slightly. Place a small teaspoon of cheesecake filling in the center and fold edges around it, sealing gently.
- Place cookies on prepared baking sheet, spacing about 2 inches apart.
- Bake 12β14 minutes, until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
