- 4 boneless chicken breasts or thighs
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 1/2 cups cherry tomatoes, halved
- 1/2 cup tomato sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish

- Sear: Heat olive oil in a skillet over medium heat. Cook chicken 5–6 minutes per side until golden. Remove and set aside.
- Make sauce: In the same pan, sauté garlic for 30 seconds. Add cherry tomatoes and cook until softened.
- Add tomato sauce and simmer for 5 minutes.
- Combine: Return chicken to the pan and spoon sauce over.
- Add cheese: Sprinkle mozzarella on top, cover, and cook until melted.
- Serve: Garnish with fresh basil and serve hot.
Notes
Serve with pasta, rice, or crusty bread to soak up the sauce. You can broil briefly for a golden cheesy top.
