- 2 large sweet potatoes, peeled and thinly sliced
- 3 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika or thyme (optional)
- Fresh parsley or chives, for garnish
Instructions
- Preheat oven to 400Β°F (200Β°C) and grease a baking dish or line with parchment paper.
- Mix melted butter with minced garlic, salt, pepper, and optional paprika or thyme.
- Stack sweet potato slices in the baking dish, brushing each layer lightly with garlic butter mixture.
- Cover with foil and bake for 25β30 minutes, until tender.
- Remove foil and bake an additional 10β15 minutes to lightly brown the tops.
- Garnish with fresh parsley or chives and serve warm.
