- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, smashed
- 1 tsp fresh thyme or rosemary (optional)
- Salt and black pepper, to taste

- Bring to room temp: Let steaks sit at room temperature for 20–30 minutes.
- Season: Pat steaks dry and season generously with salt and pepper.
- Heat pan: Heat olive oil in a heavy skillet over high heat until very hot.
- Sear steaks: Add steaks and cook for 3–4 minutes per side for medium-rare (adjust to preference).
- Add butter: Reduce heat to medium, add butter, garlic, and herbs.
- Baste: Spoon melted butter over the steaks continuously for 1–2 minutes.
- Rest: Remove steaks and let rest for 5 minutes before slicing.
- Serve: Drizzle with garlic butter from the pan and serve immediately.
Notes
Use a cast iron skillet for the best sear. Avoid moving the steak too much while cooking to develop a good crust. Letting the steak rest is key to keeping it juicy.
