  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup fruit jam or preserves (strawberry, raspberry, apricot, etc.)

  1. Preheat oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter & sugar: In a large bowl, beat butter and sugar until light and fluffy.
  3. Add egg and vanilla extract, mixing until combined.
  4. Gradually mix in flour and salt until dough forms.
  5. Shape cookies: Roll dough into 1-inch balls and place on prepared baking sheets.
  6. Use your thumb or the back of a spoon to press an indentation in the center of each cookie.
  7. Fill each indentation with about 1/2 tsp of jam.
  8. Bake: Bake 12–15 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a festive touch, use different colored jams. Cookies can be stored in an airtight container for up to 5 days. For a softer cookie, slightly underbake by 1–2 minutes.
