Description
A hearty twist on the classic French Onion Soup, made with tender chicken for added protein. Caramelized onions, savory broth, and melted cheese over toasted bread make this a comforting family favorite.

- 4 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp all-purpose flour
- 6 cups chicken broth
- 1/2 cup dry white wine (optional)
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- 2 cups cooked shredded chicken
- Baguette slices, toasted
- 1 1/2 cups grated Gruyère or Swiss cheese
Instructions
- Melt butter with olive oil in a large pot over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are deeply caramelized, about 30–40 minutes.
- Add garlic and cook for 1–2 minutes more.
- Stir in flour and cook for 1–2 minutes to remove raw taste.
- Gradually add chicken broth and wine (if using), stirring constantly. Add thyme and shredded chicken. Simmer for 20 minutes.
- Preheat oven broiler. Ladle soup into oven-safe bowls, top with toasted baguette slices, and sprinkle with grated cheese.
- Broil until cheese is melted and bubbly, about 2–4 minutes. Serve hot.
Notes
For a vegetarian version, omit the chicken and use vegetable broth. Gruyère can be substituted with Swiss or mozzarella cheese.
