- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 cup green beans, chopped
- 1 cup spinach or kale, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp smoked paprika
- 1/4 tsp crushed red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until fragrant and softened.
- Add carrots, celery, zucchini, red bell pepper, and green beans. Cook for 5–7 minutes until slightly tender.
- Stir in diced tomatoes, vegetable broth, oregano, basil, smoked paprika, and red pepper flakes. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender and flavors meld.
- Add spinach or kale during the last 5 minutes of cooking.
- Serve hot, garnished with fresh parsley.
Notes
Feel free to swap in seasonal vegetables. For a creamier texture, blend part of the soup before serving or add a splash of coconut milk.
