- 1 Β½ cups graham cracker crumbs
- 1/3 cup melted butter
- 2 tbsp sugar
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 can (21 oz) cherry pie filling
Instructions
- Preheat the oven to 325Β°F (165Β°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the pan to form the crust.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla and lemon juice.
- Pour the cheesecake mixture over the crust and spread evenly.
- Bake for 30β35 minutes or until the center is set. Let cool completely.
- Spread the cherry pie filling over the cooled cheesecake. Chill for at least 3 hours before slicing into bars.
