- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 cup eggnog
- 1 tsp vanilla extract
- Optional: 1/2 cup chopped nuts or dried fruit
Instructions
- Preheat oven to 350Β°F (175Β°C). Grease and flour a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
- In a separate bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well. Stir in eggnog and vanilla extract.
- Gradually fold in dry ingredients until just combined. Fold in nuts or dried fruit if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 50β60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
