Description

These Easy White Chicken Enchiladas are creamy, cheesy, and comforting—made with tender shredded chicken rolled in soft tortillas and smothered in a rich homemade white sauce. A simple, crowd-pleasing dinner perfect for any night of the week!


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded Monterey Jack cheese (plus more for topping)
  • 8 small flour tortillas
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 (4 oz) can diced green chiles
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt & pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Fill each tortilla with shredded chicken and a sprinkle of Monterey Jack cheese. Roll and place seam-side down in a greased 9×13 baking dish.
  3. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  4. Slowly whisk in chicken broth and cook until the mixture thickens.
  5. Remove from heat and stir in sour cream, green chiles, garlic powder, onion powder, salt, and pepper.
  6. Pour the white sauce over the enchiladas and top with more shredded cheese.
  7. Bake for 20–25 minutes, or until cheese is melted and bubbly. Broil for 1–2 minutes for a golden top if desired.
  8. Garnish with cilantro and serve warm.

Notes

Use rotisserie chicken to save time. Add sautéed onions or jalapeños for extra flavor. Swap Monterey Jack for pepper jack for more heat. These enchiladas can be assembled ahead and baked later for an easy make-ahead dinner!
