This Easy Spicy Salmon Sushi Bake is a deconstructed sushi dish baked in a casserole style. Layers of seasoned rice, tender salmon, creamy spicy mayo, and nori make it perfect for a crowd or weeknight dinner.

- 2 cups sushi rice, cooked and seasoned with rice vinegar
- 1 lb fresh salmon fillet, skin removed
- 3 tbsp mayonnaise
- 1–2 tbsp sriracha (adjust for spice)
- 2 tsp soy sauce
- 1 tsp sesame oil
- 2 green onions, thinly sliced
- 1 sheet nori, cut into small squares
- Optional garnish: sesame seeds, avocado slices, or cucumber

- Preheat oven to 375°F (190°C).
- Place cooked sushi rice in a greased 8×8-inch baking dish and press into an even layer.
- Flake salmon into bite-sized pieces and place evenly over rice.
- In a small bowl, mix mayonnaise, sriracha, soy sauce, and sesame oil. Spread evenly over the salmon.
- Bake for 12–15 minutes until salmon is cooked through and the top is slightly golden.
- Remove from oven and sprinkle with green onions, sesame seeds, and optional garnishes.
- Serve with small nori squares to scoop the sushi bake like deconstructed sushi.
Notes
For extra creaminess, add a layer of avocado slices before baking. Adjust spice level by varying sriracha. Leftovers can be refrigerated and reheated gently before serving.
