- 1 1/2 lbs boneless, skinless chicken breasts, cut into strips
- 2 bell peppers, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 4–6 pita breads
- Optional toppings: tzatziki sauce, chopped lettuce, tomatoes, feta cheese

- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss chicken strips, bell peppers, and onion with olive oil, garlic powder, paprika, cumin, salt, and pepper.
- Spread chicken and vegetables evenly on the prepared sheet pan.
- Roast in the oven for 20–25 minutes, stirring halfway through, until chicken is cooked through and vegetables are tender.
- Warm pita breads in the oven or microwave.
- Assemble pitas by filling them with roasted chicken and vegetables. Top with tzatziki sauce, lettuce, tomatoes, and feta as desired.
Notes
Optional: Add olives, cucumber, or hot sauce for extra flavor. Leftovers can be stored in the fridge for up to 3 days and reheated for quick lunches.
