  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup broccoli florets
  • 1/2 cup unsalted cashews
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 1 tsp grated ginger (optional)
  • 2 tbsp chopped green onions (for garnish)

  1. Preheat oven: Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Prepare sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, ginger, and cornstarch mixture.
  3. Arrange ingredients: Place chicken pieces, bell peppers, and broccoli on the sheet pan. Drizzle with olive oil and half of the sauce. Toss gently to coat.
  4. Roast: Bake for 18–20 minutes until chicken is cooked through and vegetables are tender.
  5. Add cashews: Sprinkle cashews over the pan and drizzle with remaining sauce. Return to the oven for 3–5 minutes.
  6. Serve: Garnish with chopped green onions and serve warm with rice or noodles.

Notes

For extra heat, add red pepper flakes or a drizzle of chili sauce. You can substitute snap peas or carrots for the broccoli. Leftovers store well in the refrigerator for up to 3 days.
