- 1 1/2 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup unsalted cashews
- 3 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp grated ginger (or 1/2 tsp ground ginger)
- 1/4 tsp crushed red pepper flakes (optional)
- Salt and pepper, to taste
- Cooked rice, for serving

- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- In a large bowl, whisk together soy sauce, hoisin sauce, sesame oil, garlic, ginger, and red pepper flakes.
- Add chicken and vegetables to the bowl and toss until evenly coated.
- Spread chicken and veggies in a single layer on the prepared sheet pan. Scatter cashews on top.
- Roast 20–25 minutes, stirring halfway, until chicken is cooked through (165°F / 74°C) and vegetables are tender.
- Serve hot over cooked rice.
Notes
For extra crunch, toast cashews lightly before adding to the pan. You can swap vegetables depending on season or preference—snow peas, carrots, or zucchini work well.
