Ingredients

- 1 1/2 cups finely chopped pecans
- 1 cup graham cracker crumbs
- 1/2 cup brown sugar
- 1/2 cup corn syrup
- 1/4 cup unsalted butter, melted
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 8 oz chocolate melting wafers or chocolate chips (for coating)
Instructions
- In a large bowl, mix together the chopped pecans, graham cracker crumbs, brown sugar, cinnamon, and salt.
- Stir in corn syrup, melted butter, and vanilla extract until well combined. The mixture should hold together when pressed.
- Roll the mixture into 1-inch balls and place them on a parchment-lined tray.
- Melt the chocolate according to package instructions and dip each ball until fully coated.
- Place on parchment paper and refrigerate for 20β30 minutes, or until the chocolate is set.
- Store in an airtight container in the fridge for up to 1 week. Enjoy chilled or at room temperature!
