  • 1 1/4 cups all-purpose flour
  • 1/2 cup cold butter, cubed
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 12 tbsp cold water
  • Pinch of salt

Lemon Curd

  • 3/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 3/4 cup sugar
  • 3 large eggs
  • 1/2 cup butter

  1. Make tart shells: Mix flour, powdered sugar, and salt. Cut in butter until crumbly. Add egg yolk and cold water to form dough. Chill for 30 minutes.
  2. Roll dough and press into mini tart pans. Bake at 350°F (175°C) for 12–15 minutes until golden. Cool completely.
  3. Make lemon curd: Whisk lemon juice, zest, sugar, and eggs in a saucepan over low heat. Stir constantly until thickened.
  4. Remove from heat and stir in butter until smooth. Let cool slightly.
  5. Fill tartlets: Spoon lemon curd into cooled shells.
  6. Chill: Refrigerate for at least 1 hour before serving.

Notes

For extra shine, top with powdered sugar or fresh berries. Store in the fridge and serve chilled for best texture.
