- 1 1/4 cups all-purpose flour
- 1/2 cup cold butter, cubed
- 1/4 cup powdered sugar
- 1 egg yolk
- 1–2 tbsp cold water
- Pinch of salt
Lemon Curd
- 3/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 3/4 cup sugar
- 3 large eggs
- 1/2 cup butter

- Make tart shells: Mix flour, powdered sugar, and salt. Cut in butter until crumbly. Add egg yolk and cold water to form dough. Chill for 30 minutes.
- Roll dough and press into mini tart pans. Bake at 350°F (175°C) for 12–15 minutes until golden. Cool completely.
- Make lemon curd: Whisk lemon juice, zest, sugar, and eggs in a saucepan over low heat. Stir constantly until thickened.
- Remove from heat and stir in butter until smooth. Let cool slightly.
- Fill tartlets: Spoon lemon curd into cooled shells.
- Chill: Refrigerate for at least 1 hour before serving.
Notes
For extra shine, top with powdered sugar or fresh berries. Store in the fridge and serve chilled for best texture.
