- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 1 cup buttermilk
- 1 1/2 cups fresh or frozen blueberries
- Optional glaze: 1 cup powdered sugar + 2 tbsp lemon juice

- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla and lemon zest.
- Alternate adding flour mixture and buttermilk to the butter mixture, beginning and ending with flour. Fold in blueberries gently.
- Pour batter into prepared pan and smooth the top. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely. Optional: whisk powdered sugar and lemon juice to make a glaze and drizzle over the cooled cake.
Notes
Optional: Toss blueberries with a teaspoon of flour before folding in to prevent sinking. Serve with whipped cream or a scoop of vanilla ice cream.
