Description

This Easy Jiffy Corn Casserole is creamy, buttery, and the perfect side dish for Thanksgiving, Christmas, or any family dinner.


Ingredients

  • 1 (8.5 oz) box Jiffy corn muffin mix
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can creamed corn
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  2. In a large bowl, combine corn muffin mix, whole corn, creamed corn, sour cream, and melted butter.
  3. Stir until fully combined. Fold in shredded cheddar cheese if using.
  4. Pour mixture into prepared baking dish and spread evenly.
  5. Bake for 45–50 minutes, until the top is golden and center is set.
  6. Let cool for 5 minutes before serving. Enjoy warm!

Notes

For a richer casserole, add extra cheese on top before baking. Can be doubled for a crowd using a 9×13-inch dish.
