- 2 tbsp olive oil
- 1 lb (450g) beef stew meat, cubed
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup potatoes, diced
- 1 cup green beans, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups beef broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the beef on all sides, then remove and set aside.
- Add onion and garlic to the pot and sauté until softened.
- Return beef to the pot. Add carrots, celery, potatoes, green beans, diced tomatoes, and beef broth.
- Season with thyme, parsley, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45–50 minutes, or until beef is tender and vegetables are cooked.
- Adjust seasoning if needed and serve hot, garnished with fresh parsley.
Notes
For added flavor, brown the beef in batches to avoid overcrowding the pot. You can also add barley or pasta for a more filling soup.
