Description
A quick and simplified version of the classic French onion soup. With caramelized onions, savory broth, and gooey melted cheese, this recipe is perfect for weeknight comfort food without the fuss.

- 3 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 6 cups beef broth (or vegetable broth)
- 1/2 cup dry white wine (optional)
- 1 tsp dried thyme
- 1 bay leaf
- Baguette slices, toasted
- 1 1/2 cups shredded Gruyère or Swiss cheese
Instructions
- In a large pot, melt butter over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring often, until onions are soft and golden, about 20 minutes.
- Stir in garlic and cook for another minute.
- Add beef broth, wine (if using), thyme, and bay leaf. Bring to a simmer and cook for 15–20 minutes. Remove bay leaf.
- Preheat oven broiler. Ladle soup into oven-safe bowls, top each with toasted baguette slices, and sprinkle generously with cheese.
- Broil until cheese is melted and bubbly, about 2–3 minutes. Serve hot.
Notes
For faster prep, slice onions ahead of time. Substitute mozzarella or provolone if Gruyère isn’t available.
