Description

A quick and simplified version of the classic French onion soup. With caramelized onions, savory broth, and gooey melted cheese, this recipe is perfect for weeknight comfort food without the fuss.


Ingredients

  • 3 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 6 cups beef broth (or vegetable broth)
  • 1/2 cup dry white wine (optional)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Baguette slices, toasted
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. In a large pot, melt butter over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring often, until onions are soft and golden, about 20 minutes.
  2. Stir in garlic and cook for another minute.
  3. Add beef broth, wine (if using), thyme, and bay leaf. Bring to a simmer and cook for 15–20 minutes. Remove bay leaf.
  4. Preheat oven broiler. Ladle soup into oven-safe bowls, top each with toasted baguette slices, and sprinkle generously with cheese.
  5. Broil until cheese is melted and bubbly, about 2–3 minutes. Serve hot.

Notes

For faster prep, slice onions ahead of time. Substitute mozzarella or provolone if Gruyère isn’t available.
